Abstract
This study was conducted to analyse the consumption pattern and marketing practices of meat in the selected municipalities of La Union.Specifically it was conducted to: determine the socio-economic profile of the respondents, consumption pattern of consumers on selected meat, marketing practices of the meat sellers,identify the problems encountered by the sellers and present the demand and supply analysis. Most sellers and consumers are aged 41-45 and 46-50 respectively with highest educational attainment of high school graduate and their monthly income is ranging from 3001-4000. The market coverage of sellers is within La Union. The source of their supply is from farmer and the mode of payment is cash basis. Most of the sellers pick-up their supply through the use of tricycle and mostly dispose it to direct consumers on cash basis also. Meat supply often graded and standardized the whole dressed chicken and heads of beef, pork and chevon. Quantity stored by sellers is mostly above 10 kilos in a freezer within 1-3 days. Only few are selling a little volume of chevon that is why it is ranked by sellers as the most saleable followed by pork and beef. Most color of meat that the consumers prefer to purchase for consumption is red. They prefer to buy chicken but they believed that the most nutritious one is pork. The greatest volume of meat purchased in a week is chicken followed by pork, beef and chevon. Most consumers buy only fresh cut-ups/assorted and without damage meat despite higher price in the public market. The greatest factors affecting consumption pattern are health benefit/nutrition value, color and general appearance. Most sellers are experiencing of having unsold chicken since it is the most available and abundant supply. Most problems encountered by fresh meat vendors during buying and selling products are transportation, over supply, high price, limited suitable display area and poor storage facilities. Supply of meat especially chicken and pork is just enough to supply consumers here in La Union but for the supply of chevon is low because of low production.
