Abstract
The arrowroot plant is not well-recognized by the residents of La Union. This research aimed to create a new product that utilizes an indigenous raw material to introduce a new flavor to the market. In this study, the researchers employed experimental, descriptive, and quantitative methods to collect the necessary data and carried out several trials, treatments, and tests to achieve the desired product characteristics for standardizing the formulation and process of Arrowroot Pastel. The researchers conducted sensor evaluation and consumer acceptability and treatment 1 received the highest preference from these panelists and respondents. Additionally, arrowroot pastel underwent microbiological and physicochemical assessments at the Department of Science and Technology (CAR), which revealed that the properties of the arrowroot pastel passed the standards set by the Food and Drug Authority. The product cost 339 pesos containing 12 pieces. Overall, the study conclude that Arrowroot pastel is acceptable and safe to consume.
