The results of this study may help farmers, students, and consumers, particularly those who processed banana products at home, make more money by using banana peels. The goal of this study was to create Banana (Musa spp.) Peel Powder with favorable sensory and physicochemical properties. The product had undergone a number of sensory and scientific evaluations and was applied as an ingredient to a mamon.
