Abstract
For fish commodities, traditional sun drying is a relatively low-cost method of
preserving. However, it is weather-dependent and can cause degradation in the quality of dried products. As a solution, a dual-powered fish dryer to maintain the quality of dried products, and control factors affecting the process was developed.
The study was conducted to design, fabricate, and evaluate a dual-powered fish dryer, and perform a simple cost analysis of the machine. Three drying temperatures were utilized to evaluate the performance of the dryer: 50°C, 60°C, and 70°C. Three (3) kg of deboned fish were used as test material for each trial.
The highest drying capacity and efficiency were attained at 70°C with 495.61
grams/hour and 88.89%, respectively. Furthermore, at this temperature, the Breakeven Point (BEP) is 95.47 kg/year, with a Payback Period (PBP) of 1.06 years, and BenefitCost Ratio (BCR) of 1.17.
