dc.description.abstractThis research would be the first to utilize farming catfish as the main ingredient used in fish loaf products. It represents the use of primarily natural key ingredients, leading to innovative and healthier products. The Farmed Catfish Loaf study focused on standardization of formula and process, sensory qualities, microbiological analysis, physicochemical properties, shelf-life, production cost, and marketing plan -while addressing environmental issues. This study utilized a quantitative method, examining numerical information to recognize trend and formulate general conclusions. DOST tests also confirmed the safety of the product and showed that refrigeration extended its shelf¬ life. The production cost was found to be comparable to other loaf in the market and is highly marketable. The evaluation by panelists in ranking, descriptive and acceptability testshowed that Treatment 2was highly preferred by consumers. Overall, the study deemed the product acceptable and satisfying healthy food.
