The study on the consumption pattern of major root crops in selected Municipalities of La Union was conducted specifically: 1) to determine the demographic profile of the respondents; 2) to determine the consumption pattern of the sellers and consumers of major root crops in selected municipalities of La Union; 3) to determine the demand and supply analysis of root crops in selected municipalities of La Union; 4) to identify the factors affecting consumption. The data were gathered through personal interview with the aid of questionnaire from the 50 sellers and 50 consumers of root crops who were selected using the purposive sampling and were drawn from five municipalities of La Union. These were analyzed through frequency counts, average percentage, and weighted mean and regression analysis. The findings reveal that majority of the respondents had 50 years average age for sellers and 40 years average age for consumers, female and high school graduate. Majority of the sellers claimed that the products were sourced from the farmers within La Union, and delivered in the market, classified and purchased and sold on per kilo basis. Limited supply of root crops, poor quality products and transportation were considered moderate problems of the sellers. The consumers on the other hand regarded the health benefits/nutritional value of the products as the foremost consideration for their preferences. With time as a significant factor, it is projected that the production of sweet potato and gabi increase. With and increasing demand for these products, it is projected that there is a market shortage for these product. However, age had no significant influence on production.
