    Characterization, identification, and in vitro evaluation of antibacterial activity and antibiotic susceptibility of potential probiotic strain isolated from fermented mulberry (Morus alba) fruit

    Probiotics are live microorganisms that has received a lot of attention due to their beneficial qualities. These beneficial bacteria constitute a diverse group of microorganisms that play a significant role in digestive health, immune function, and disease prevention. The study sought to isolate and characterize potential probiotic strains from fermented mulberry (Morus alba) fruit, specifically evaluating their morphological characteristics, catalase and oxidase activity, probiotic properties including pH tolerance, NaCl tolerance, antibacterial activity, and antibiotic susceptibility, and determine the species identity through 16S rRNA sequencing. The findings revealed that all the selected isolates were gram-positive bacilli, catalase and oxidase negative, and identified as Bacillus cereus with >97% identity. These strains, particularly R1SD-4, R2SD-4, and R3SD-4 tolerated acidic conditions with a survival rate of 99%, and thrived at NaCl concentrations of 2%, 6%, and 8%. This species showed resistance to penicillin, and were sensitive to gentamicin, oxytetracycline, and amoxiclav. However, they exhibited no antibacterial activity against Escherichia coli and Staphylococcus aureus. These results suggest the potential of these isolates for use in probiotic applications, although further studies are needed to fully understand their benefits and safety.
